Amongst all the sweet goodies I create, I'm a firm believer in everything in moderation. So in saying that I have created these delicious, healthy date and honey muesli bars. I play with a few variations of this recipe, depending on what I feel like and what ingredients I have on hand, but regardless of that these homemade muesli bars are always so quick and easy to make and I can usually mix them together on a Sunday evening, ready for kids lunch box snacks for during the week.
What I love about them, other then the yummy caramel taste of the dates and honey together, is how they satisfy the hunger and sweet cravings, while providing that little bit of energy for either morning or afternoon tea, without the guilt factor. My toddler loves them as well - and for any mum out there, thats definitely a plus!
Healthy Muesli Bar Recipe
1 cup rolled oats (I use "quick" oats and they worked fine!)
1 cup dates, roughly chopped
2/3 cup self-raising flour, sifted
1/4 cup coconut sugar
1/2 cup desiccated coconut
1 tablespoon chia seeds
1 tablespoon flax seeds
1 tablespoon honey
1. Preheat oven to 180˚C. Grease a 28cm x 18cm tin or glass baking dish.
2. Combine oats, dates, flour, coconut sugar, coconut, and seeds in a medium bowl.
3. Melt butter (either in microwave or over the stove), and add the honey. Add to the dry ingredients and mix well to combine. Press evenly over base of baking dish.
4. Bake in oven for 15-20 minutes, or until golden. Once cooked, remove from oven and set aside to cool in tin for 10 minutes. Cut slice into bars, then allow to cool completely in tin. Once cool, remove from tin and store in an airtight container for 4-5 days.
